At Kamikura, we take pride in serving dishes that highlight the rich ingredients of the Seto Inland Sea. Our specialties include tempura made with fresh, locally-caught anago (conger eel) and seasonal sashimi. These dishes allow you to fully experience the natural bounty of the Seto Inland Sea.

Lemon Broth

The key to the flavor of our “Lemon Udon” is the broth. It is crafted by blending several ingredients, including lemon juice from our own farm and partner farmers, along with carefully selected bonito flakes and seafood. When the lemon slices placed on top of the udon soak into the broth, the combination of the lemon’s acidity and the broth’s umami spreads in your mouth, creating a deep, rich flavor.

Lemons

The Setouchi region is one of Japan’s top lemon-producing areas. On our farm and at our partner farms, we grow a variety of lemons, including the renowned Setouchi lemons. In early October, during the initial harvest season, we provide green lemons. Additionally, during the summer, we serve frozen lemons.

Nutritional Benefits of Lemons

Lemons are rich in citric acid, vitamin C, polyphenols, and limonene. Citric acid, which gives lemons their sour taste, has chelating properties that help the body absorb minerals like calcium more efficiently, as well as a salt-reducing effect. Vitamin C helps maintain healthy skin and mucous membranes and has antioxidant properties. Polyphenols also offer antioxidant benefits, contributing to beauty and wellness. Lastly, limonene, which gives lemons their refreshing aroma, promotes relaxation.
